Ingredients
Step 1 — For the Chicken
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
Step 2 — For the Bowls
- 2 cups cooked quinoa or brown rice
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
Step 3 — For the Tahini Dressing
- 1/4 cup tahini
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 2-4 tbsp water, to reach desired consistency

Cook Chicken
In a bowl, toss chicken pieces with olive oil, paprika, garlic powder, salt, and pepper. Heat a large skillet over medium-high heat and cook chicken until golden brown and cooked through, about 5-7 minutes. Set aside.

Prepare Dressing
In a small bowl, whisk together tahini, lemon juice, minced garlic, and salt. Gradually whisk in water, 1 tablespoon at a time, until the dressing is smooth and pourable.

Assemble Bowls
Divide the cooked quinoa or brown rice among 4 bowls. Top each bowl with the cooked chicken, rinsed chickpeas, chopped cucumber, halved cherry tomatoes, and chopped red onion.

Drizzle the tahini dressing generously over each bowl. Garnish with fresh parsley. Serve immediately.
