Fire Buldak
Notoriously spicy stir-fried chicken coated in a gochugaru-gochujang glaze with melted cheese. Korea's viral fire chicken — painfully hot and impossible to stop eating.

Ingredients
Step 1 — Marinate the chicken
- 2 lbs boneless chicken thighs (bite-sized)
- 3 tbsp gochugaru
- 2 tbsp gochujang
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp rice wine
- 1 tbsp sesame oil
- 4 garlic cloves (minced)
- 1 tbsp grated ginger
Step 2 — Cook and top with cheese
- 1 tbsp vegetable oil
- ½ medium onion (sliced)
- 2 green onions (sliced)
- 1 cup shredded mozzarella cheese
- Steamed white rice
- Perilla leaves (optional)

Marinate
Toss chicken with gochugaru, gochujang, soy sauce, sugar, rice wine, sesame oil, garlic, and ginger. Marinate at least 20 minutes.

Stir-fry
Heat oil in a large skillet over high heat. Add chicken and onion. Stir-fry 10–12 minutes until chicken is cooked and sauce is thick and glossy.

Melt the cheese
Reduce heat to low. Top with mozzarella, cover, and melt 1–2 minutes. Garnish with green onions. Serve with rice to tame the heat.
