Ingredients
Step 1 — For the Chili
- 1 tbsp olive oil
- 1.5 lbs ground beef (80/20 recommended)
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) pinto beans, rinsed and drained
- 1 cup beef broth
- Salt and black pepper to taste

- Shredded cheddar cheese

- Chopped green onions

Brown Beef & Sauté Veggies
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain off excess fat. Add chopped onion and bell pepper, and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more.

Add Spices & Tomatoes
Stir in chili powder, cumin, oregano, and smoked paprika. Cook for 1 minute until fragrant. Pour in the crushed tomatoes, rinsed kidney beans, rinsed pinto beans, and beef broth. Stir everything to combine.

Simmer
Bring the chili to a simmer, then reduce heat to low, cover, and let it simmer for at least 30 minutes, stirring occasionally. This allows the flavors to meld. Season with salt and black pepper to taste.

Ladle the chili into bowls and serve hot. Offer optional toppings like shredded cheese, sour cream, and green onions.
