Speedy Black Bean Burgers on Pretzel Buns

Ingredients
Step 1 — For the Burgers
- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper (any color)
- 1 large egg, lightly beaten
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and black pepper to taste
- 1 tbsp olive oil, for cooking
Step 2 — For Serving
- 4 pretzel buns
- Lettuce leaves
- Tomato slices
- Red onion slices
- Ketchup
- Mustard
- Mayonnaise

Mash Beans
In a medium bowl, mash the black beans with a fork or potato masher until mostly broken down but still slightly chunky.

Combine Ingredients
Add breadcrumbs, chopped red onion, chopped bell pepper, beaten egg, chili powder, cumin, salt, and pepper to the mashed beans. Mix well until all ingredients are evenly combined. If the mixture seems too wet, add a tablespoon more breadcrumbs.

Form Patties
Divide the mixture into 4 equal portions and shape them into patties, about 3/4 inch thick. If time allows, refrigerate for 15 minutes to help them firm up.

Cook Burgers
Heat olive oil in a large skillet over medium heat. Cook patties for 5-7 minutes per side, until golden brown and heated through. Carefully transfer to a plate.

Assemble Burgers
Toast the pretzel buns if desired. Assemble burgers with lettuce, tomato, onion, and your favorite condiments.
