Ingredients
Step 1 — Make the pudding
- 2 cups all-purpose flour
- 1 cup suet or cold butter (grated)
- ½ cup sugar
- 1 cup currants
- 1 tsp baking powder
- ½ tsp nutmeg
- Pinch of salt
- ¾ cup cold milk
- Zest of 1 lemon
Step 2 — Serve
- Custard sauce
- Or vanilla ice cream

Mix the pudding
Combine flour, suet, sugar, currants, baking powder, nutmeg, salt, and lemon zest. Stir in milk to form a stiff dough.

Steam
Shape into a log, wrap in greased parchment and foil. Steam 1½ hours until firm and cooked through.

Slice and serve warm with pouring custard.
