Black Bean Burgers with Avocado Salsa

Ingredients
Step 1 — For the Black Bean Burgers
- 1 (15 oz) can black beans, rinsed and drained
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 large egg, lightly beaten
- Salt and pepper to taste
- 1 tbsp olive oil (for cooking)
Step 2 — For the Avocado Salsa
- 1 ripe avocado, diced
- 1/2 cup corn (canned or frozen, thawed)
- 1/4 cup finely chopped red onion
- 1 jalapeño, seeded and minced (optional)
- 2 tbsp chopped cilantro
- 1 tbsp lime juice
- Salt to taste

- 4 whole wheat burger buns
- Lettuce leaves

Prepare Burger Mixture
In a medium bowl, mash the black beans with a fork or potato masher until mostly broken down but still slightly chunky. Stir in breadcrumbs, red onion, cilantro, cumin, chili powder, beaten egg, salt, and pepper. Mix until well combined.

Form Patties
Divide the mixture into four equal portions and form into patties, about 3/4-inch thick. If the mixture is too sticky, add a little more breadcrumbs.

Cook Burgers
Heat olive oil in a large skillet over medium heat. Carefully place the patties in the skillet and cook for 6-8 minutes per side, until golden brown and heated through. Handle gently as they can be delicate.

Make Avocado Salsa
While burgers cook, gently combine diced avocado, corn, red onion, jalapeño (if using), cilantro, lime juice, and salt in a small bowl. Be careful not to mash the avocado too much.

Assemble Burgers
Toast the burger buns. Place a black bean patty on the bottom half of each bun, top with lettuce, tomato slices, and a generous spoonful of avocado salsa. Add the top bun and serve immediately.
