Spicy Black Bean Burgers with Avocado Salsa

Ingredients
Step 1 — For the Burgers
- 2 (15 oz) cans black beans, rinsed and drained
- 1/2 cup cooked quinoa
- 1/2 cup breadcrumbs (whole wheat)
- 1/4 cup finely chopped red onion
- 1 jalapeño, finely minced (seeds removed for less heat)
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 large egg, lightly beaten
- 2 tbsp chopped fresh cilantro
- Salt and black pepper to taste
- 1 tbsp olive oil (for cooking)
Step 2 — For the Avocado Salsa
- 1 large ripe avocado, diced
- 1/2 cup diced tomato
- 1/4 cup diced red onion
- 2 tbsp chopped fresh cilantro
- 1 tbsp lime juice
- Salt to taste

- 4 whole wheat burger buns
- Lettuce leaves
- Tomato slices

Make Avocado Salsa
In a medium bowl, gently combine diced avocado, tomato, red onion, cilantro, lime juice, and salt. Set aside.

Prepare Burger Mixture
In a large bowl, mash about 3/4 of the black beans with a fork or potato masher until mostly broken down but still chunky. Add the remaining whole black beans, cooked quinoa, breadcrumbs, red onion, jalapeño, garlic, cumin, chili powder, smoked paprika, beaten egg, cilantro, salt, and pepper. Mix well until combined.

Form Patties
Divide the mixture into 4 equal portions and form into patties, about 3/4 inch thick. If the mixture is too sticky, add a little more breadcrumbs.

Cook Burgers
Heat olive oil in a large skillet over medium heat. Carefully place the patties in the skillet and cook for 5-7 minutes per side, until golden brown and heated through. Be gentle when flipping.

Assemble Burgers
Toast the burger buns lightly. Place a black bean burger on the bottom half of each bun, top with avocado salsa, lettuce, and tomato slices. Add the top bun and serve immediately.
