Step 1 — For the Sheet Pan
- 1.5 pound pork tenderloin
- 2 medium apples (like Honeycrisp or Fuji), cored and cut into 1-inch wedges
- 1 large red onion, cut into wedges
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper to taste

Preheat Oven and Prepare Pan
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.

Prepare Pork and Vegetables
Pat the pork tenderloin dry with paper towels. Trim any excess silver skin. In a large bowl, combine apple wedges and red onion wedges. Drizzle with 1 tablespoon of olive oil, sprinkle with half of the rosemary, garlic powder, salt, and pepper. Toss to coat.

Sear Pork (Optional but Recommended)
Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until nicely browned, about 2-3 minutes per side. This step enhances flavor and texture but can be skipped for ultimate simplicity; simply place the un-seared tenderloin on the baking sheet.

Roast Everything
Arrange the seasoned apples and onions on one side of the prepared baking sheet. Place the seared (or un-seared) pork tenderloin on the other side. Rub the pork with the remaining rosemary, garlic powder, salt, and pepper. Roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C) for medium-rare, or longer depending on desired doneness. The apples and onions should be tender and slightly caramelized.

Rest and Slice
Remove the baking sheet from the oven. Transfer the pork tenderloin to a cutting board and let it rest for 5-10 minutes before slicing. Serve the sliced pork with the roasted apples and onions.
