Clafoutis
A rustic Limousin dessert — sweet cherries baked in a custard-like batter until puffed and golden. Simple, seasonal, and wonderful warm with powdered sugar.

Ingredients
Step 1 — Batter
- 3 large eggs
- ½ cup sugar
- ½ cup all-purpose flour
- 1 cup whole milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
- Pinch of salt
Step 2 — Fruit and finish
- 3 cups fresh cherries (pitted) or berries
- Powdered sugar (for dusting)

Make the batter
Preheat oven to 350°F. Butter a 9-inch baking dish. Whisk eggs and sugar until pale. Add flour, milk, melted butter, vanilla, and salt; whisk until smooth.

Add fruit and bake
Arrange cherries in the baking dish. Pour batter over fruit. Bake 35–40 minutes until puffed, set in the center, and golden brown.

Serve
Cool slightly — clafoutis will deflate a bit, which is normal. Dust with powdered sugar and serve warm or at room temperature.
