Ingredients
Step 1 — Prep noodles and sauce
- 8 oz sweet potato glass noodles (dangmyeon)
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 2 tbsp sesame oil
- 1 tbsp mirin or rice wine
- ½ tsp black pepper
Step 2 — Cook proteins and vegetables
- ½ lb beef (thinly sliced)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 2 garlic cloves (minced)
- 1 medium carrot (julienned)
- 1 red bell pepper (julienned)
- 5 oz baby spinach
- 4 shiitake mushrooms (sliced)
- ½ medium onion (sliced)
- 2 tbsp vegetable oil
- 2 garlic cloves (minced)
- 2 green onions (sliced)
- 1 tbsp toasted sesame seeds

Cook the noodles
Boil glass noodles according to package until chewy-tender, about 6–8 minutes. Drain, rinse with cold water, and cut into manageable lengths with scissors. Toss with 1 tbsp sesame oil.

Stir-fry components
Marinate beef briefly in soy sauce, sesame oil, sugar, and garlic. Stir-fry beef, then each vegetable separately in oil until just tender. Season lightly with salt.

Combine and finish
Whisk remaining sauce ingredients. In a large pan over medium heat, combine noodles, vegetables, beef, and sauce. Toss 2–3 minutes until glossy. Garnish with green onions and sesame seeds.
