Ingredients
Step 1 — Marinate pork chops
- 4 pork chops (about 6 oz each)
- 3 tbsp fish sauce
- 2 tbsp sugar
- 4 garlic cloves (minced)
- 1 tbsp lemongrass (minced)
- 1 tbsp vegetable oil
Step 2 — Make egg meatloaf
- 4 eggs
- ½ lb ground pork
- 2 wood ear mushrooms (minced)
- 2 tbsp fish sauce
- Pinch of pepper
Step 3 — Serve
- 4 cups broken rice (com tam, cooked)
- Scallion oil (mo hanh)
- Pickled daikon and carrot
- Cucumber slices
- Fish sauce dressing
- Fried egg (optional)

Marinate and grill pork
Marinate pork chops at least 1 hour. Grill over medium-high heat 5–6 minutes per side until caramelized and cooked through.

Steam egg meatloaf
Mix eggs, ground pork, mushrooms, fish sauce, and pepper. Pour into a greased dish. Steam 20 minutes until set. Slice.

Plate and serve
Mound broken rice on plates. Top with pork chop, egg meatloaf slices, scallion oil, and pickled vegetables. Serve fish sauce dressing on the side.
