Coronation Chicken
Poached chicken in a creamy curry-mayonnaise sauce with apricots and almonds. Created for Queen Elizabeth II's coronation — still a British buffet staple.

Ingredients
Step 1 — Poach the chicken
- 2 lbs chicken breasts
- 1 onion (halved)
- 2 bay leaves
- 4 cups water
- Salt and pepper
Step 2 — Make the dressing
- ¾ cup mayonnaise
- ½ cup plain yogurt
- 2 tbsp mango chutney
- 1 tbsp curry powder
- 2 tbsp lemon juice
- ¼ cup slivered almonds (toasted)
- ¼ cup dried apricots (chopped)
- 2 tbsp fresh cilantro

Poach chicken
Simmer chicken with onion, bay leaves, and salted water 15–18 minutes until cooked. Cool and shred.

Make dressing
Whisk mayonnaise, yogurt, chutney, curry powder, and lemon juice. Fold in chicken, apricots, almonds, and cilantro.

Serve
Chill at least 1 hour. Serve in sandwiches, on salads, or with rice.
