Crispy Baked Chicken Tenders with Sweet Potato Fries

Ingredients
Step 1 — For the Chicken Tenders
- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch strips
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 2 large eggs, beaten
- 2 tbsp olive oil
Step 2 — For the Sweet Potato Fries
- 2 large sweet potatoes, peeled and cut into 1/2-inch thick fries
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Step 3 — Dipping Sauces (Optional)
- Ketchup, honey mustard, BBQ sauce

Preheat Oven and Prep Fries
Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper. In a large bowl, toss the sweet potato fries with 1 tbsp olive oil, chili powder, salt, and pepper until evenly coated. Spread in a single layer on one prepared baking sheet.

Roast Fries
Roast the sweet potato fries for 15 minutes, flipping halfway through.

Prepare Chicken Coating
While fries roast, in a shallow dish, combine panko breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and pepper. In another shallow dish, beat the eggs. Dredge each chicken tender first in the beaten egg, then press firmly into the panko mixture to coat completely.

Arrange Chicken
Drizzle the remaining 2 tbsp olive oil over the second prepared baking sheet. Arrange the coated chicken tenders in a single layer on the baking sheet. Drizzle a little more oil over the tops of the tenders if needed for crispiness.

Bake Chicken and Fries
After the fries have roasted for 15 minutes, add the baking sheet with the chicken tenders to the oven. Continue baking both sheets for another 15-20 minutes, or until the chicken is cooked through and golden brown, and the fries are tender and slightly crispy.

Serve the baked chicken tenders and sweet potato fries immediately with your favorite dipping sauces.
