Ingredients
Step 1 — Duck breast
- 4 duck breasts (about 6 oz each)
- Salt and black pepper
- Score the skin in a crosshatch pattern
Step 2 — Orange sauce
- Juice of 2 oranges
- Zest of 1 orange
- ¼ cup Grand Marnier or dry white wine
- 1 cup chicken stock
- 2 tbsp sugar
- 1 tbsp red wine vinegar
- 2 tbsp cold butter

- Orange segments (supremed)
- Roasted baby potatoes or wild rice

Render duck skin
Season duck breasts. Place skin-side down in a cold skillet. Cook over medium-low heat 12–15 minutes until skin is crispy and fat is rendered. Flip and cook 3–4 minutes for medium-rare. Rest 5 minutes.

Make orange sauce
Pour off excess duck fat, leaving 1 tablespoon. Add orange juice, zest, Grand Marnier, stock, sugar, and vinegar. Simmer until reduced by half and syrupy, 8–10 minutes. Whisk in cold butter off heat.

Slice and serve
Slice duck on the bias. Fan on plates, spoon sauce over, and garnish with orange segments. Serve with roasted potatoes or wild rice.
