Ingredients
Step 1 — Meat mixture
- 1½ lbs ground beef
- 1 lb ground pork
- ½ lb bacon (ground or very finely minced)
- 1 medium onion (finely grated)
- 2 tsp salt
- 1 tsp white pepper
- ½ tsp mace
- ½ tsp marjoram
- 2 tbsp ice water
Step 2 — Serve
- Crusty Semmel rolls
- Sweet Bavarian mustard
- Pickles
- Fried eggs (optional)

Blend the meat
Combine all meats, onion, spices, and ice water. Process in a food processor until very smooth and paste-like — the texture is key to authentic Leberkäse.

Bake
Pack mixture into a greased loaf pan. Bake at 325°F for 50–60 minutes until internal temperature reaches 160°F and top is golden brown.

Serve Leberkässemmel
Cool slightly, slice ½ inch thick. Pan-fry slices in butter until edges are crispy. Serve in a roll with mustard and pickles — a classic Bavarian snack.
