Ingredients
Step 1 — For the Cod
- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 tbsp chopped fresh parsley
- Salt and black pepper to taste
Step 2 — For the Asparagus
- 1 lb asparagus, trimmed
- 1 tbsp olive oil
- Salt and black pepper to taste

Preheat Oven and Prep Asparagus
Preheat oven to 400°F (200°C). On a baking sheet, toss the trimmed asparagus with 1 tbsp olive oil, salt, and pepper. Spread into a single layer.

Prepare Cod
Pat the cod fillets dry. In a small bowl, whisk together 2 tbsp olive oil, minced garlic, lemon juice, salt, and pepper. Place the cod fillets in a baking dish or on the other side of the baking sheet with the asparagus.

Season Cod
Spoon or brush the lemon garlic mixture evenly over the cod fillets.

Place the baking sheet (with asparagus and cod) into the preheated oven. Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork, and the asparagus is tender-crisp. Cooking time may vary based on fillet thickness.

Sprinkle the baked cod with fresh chopped parsley. Serve immediately with the roasted asparagus.
