Ingredients
Step 1 — Crispy Rice
- 2 cups cooked sushi rice (chilled is best)
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1/2 tsp sugar
- 2-3 tbsp neutral oil (like canola or vegetable) for frying
Step 2 — Spicy Topping (choose one)
- 4 oz sashimi-grade tuna or salmon, finely diced
- 2 tbsp mayonnaise
- 1-2 tsp sriracha (or to taste)
- 1/2 tsp sesame oil
- 1 tsp soy sauce
- 1/4 tsp toasted sesame seeds

- Thinly sliced avocado
- Thinly sliced jalapeño
- Nori strips
- Ponzu sauce
- Scallions, sliced

Prepare the Crispy Rice
In a bowl, mix the chilled cooked sushi rice with rice vinegar, soy sauce, and sugar. Mix well. Press the seasoned rice into a small baking pan or container (about 8x8 inches for 1-inch thick squares) lined with plastic wrap, pressing firmly to compact it. Chill in the refrigerator for at least 30 minutes, or up to several hours, to help it hold its shape. Once chilled, carefully remove the rice from the pan and cut it into 1-inch by 2-inch rectangles or squares.

Fry the Rice
Heat neutral oil in a large non-stick skillet over medium-high heat. Once hot, carefully add the rice pieces in a single layer, ensuring not to overcrowd the pan. Fry for 3-5 minutes per side, until golden brown and crispy. You may need to do this in batches. Transfer the crispy rice to a plate lined with paper towels to drain excess oil.

Prepare Toppings and Assemble
While the rice cools, prepare your chosen toppings. For spicy tuna/salmon: In a small bowl, combine diced fish with mayonnaise, sriracha, sesame oil, soy sauce, and sesame seeds. Mix gently. To assemble, place a dollop of your desired topping (spicy tuna/salmon, or just avocado) on each piece of crispy rice. Garnish with additional sesame seeds, thin slices of jalapeño, nori strips, or scallions. Drizzle with ponzu sauce if desired, and serve immediately.
