Longganisa
Garlicky Filipino sweet sausage pan-fried until caramelized. Whether Vigan-style (garlicky) or Lucban-style (sweet), it's essential breakfast fare with garlic rice and egg.

Ingredients
Step 1 — Homemade longganisa (or store-bought)
- 1.5 lbs ground pork
- 3 tbsp brown sugar
- 3 tbsp vinegar
- 6 garlic cloves (minced)
- 1 tbsp soy sauce
- 1 tsp paprika
- 1 tsp salt
- ½ tsp pepper
- Hog casings (optional)
Step 2 — Serve
- Garlic fried rice
- 4 fried eggs
- Vinegar dipping sauce

Make the sausage
Mix ground pork with sugar, vinegar, garlic, soy sauce, paprika, salt, and pepper. Stuff into casings or shape into small patties/links. (Store-bought longganisa skips this step.)

Pan-fry
Add sausages to a cold pan with ¼ cup water. Cook over medium heat until water evaporates, then continue frying until browned and caramelized, about 10 minutes total.

Serve
Serve as longsilog: longganisa with garlic fried rice and fried egg. Dip in vinegar with garlic and chili.
