Ingredients
Step 1 — Cook the rice
- 3 cups cooked white rice (warm)
Step 2 — Prep and coat the spam
- 1 can (12 oz) Spam (classic)
- 3 tbsp granulated sugar
- 1 tbsp vegetable oil
Step 3 — Serve
- 2 green onions (sliced)
- Soy sauce (optional, for drizzling)
- Fried eggs (optional)

Cook the rice
Cook rice according to package directions if you have not already. Keep warm — this dish is best served immediately over steaming rice.

Coat the spam in sugar
Slice the Spam into ¼-inch thick pieces. Place in a bowl and toss with granulated sugar until every piece is lightly coated. The sugar will caramelize in the pan and give the spam a sweet, lacquered crust.

Fry the spam
Heat vegetable oil in a large skillet over medium-high heat. Add the sugared Spam in a single layer (work in batches if needed). Fry 2–3 minutes per side until deeply golden, crispy at the edges, and the sugar has melted into a glossy caramel. Watch closely — sugar burns fast once it starts to brown.

Serve over rice
Divide warm rice among bowls. Top with the caramelized Spam, sliced green onions, and a drizzle of soy sauce if you like. Add a fried egg on the side for extra breakfast energy.
