Step 1 — For the Salmon
- 4 (6-ounce) salmon fillets, skin on or off
- 1 tablespoon olive oil
- 1 pint cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 1 lemon, thinly sliced

- Fresh parsley, chopped (optional)

Preheat Oven
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare Salmon and Vegetables
Place salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with oregano, thyme, salt, and pepper. Arrange cherry tomato halves and halved Kalamata olives around the salmon.

Add Lemon Slices
Top each salmon fillet with a few thin lemon slices.

Bake for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork. The tomatoes should be softened and slightly burst.

Serve the baked salmon immediately with the roasted tomatoes and olives. Garnish with fresh parsley if desired. Spoon any pan juices over the salmon.
