Ingredients
Step 1 — Make the broth
- 1 lb pork ribs (cut)
- 6 cups water
- 2 tbsp fish sauce
- 1 tbsp annatto oil
- 1 tsp turmeric
- 1 tbsp shrimp paste
Step 2 — Toppings
- 1 lb fresh turmeric noodles (or egg noodles)
- ½ lb shrimp (peeled)
- ½ lb pork (sliced)
- 2 hard-boiled eggs (halved)
- Banana blossom (sliced)
- Bean sprouts
- Fresh herbs
- Crushed peanuts
- Sesame rice crackers (banh trang me)

Make broth
Simmer pork ribs with water 40 minutes. Season with fish sauce, annatto oil, turmeric, and shrimp paste. Broth should be concentrated — only a small amount per bowl.

Cook proteins
Poach shrimp and sliced pork in the broth until cooked.

Assemble
Place noodles in bowls. Top with pork, shrimp, egg, banana blossom, and bean sprouts. Ladle a small amount of broth over (not submerged). Garnish with herbs, peanuts, and crushed rice crackers.
