Mousse au Chocolat

Ingredients
Step 1 — Chocolate base
- 8 oz bittersweet chocolate (60–70%, chopped)
- 4 large eggs (separated)
- 2 tbsp sugar
- Pinch of salt
- ½ cup heavy cream (whipped)
Step 2 — Serve
- Whipped cream
- Chocolate shavings

Melt chocolate
Melt chocolate in a double boiler or microwave, stirring until smooth. Cool slightly. Stir in egg yolks one at a time until glossy.

Fold in egg whites and cream
Beat egg whites with sugar and salt to stiff peaks. Whip cream to soft peaks. Fold one-third of egg whites into chocolate to lighten, then fold in remaining whites. Gently fold in whipped cream.

Chill and serve
Spoon into serving glasses. Refrigerate at least 4 hours until set. Top with whipped cream and chocolate shavings before serving.
