Step 1 — For the Pasta
- 1 lb Italian sausage (mild or hot), casing removed
- 1 tbsp olive oil
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 2 cloves garlic, minced
- 1 (15 oz) can diced tomatoes, undrained
- 3 cups chicken broth
- 8 oz pasta (penne, rotini, or farfalle)
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper to taste
- 1/4 cup grated Parmesan cheese (optional, for serving)

Brown Sausage
Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.

Sauté Vegetables
Add sliced onion and bell peppers to the skillet with the sausage. Cook, stirring occasionally, until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

Simmer Pasta
Pour in the diced tomatoes (with their juice), chicken broth, and dried oregano. Bring to a boil. Add the pasta, stir to combine, and reduce heat to medium-low. Cover and simmer for 12-15 minutes, or until pasta is al dente and most of the liquid is absorbed, stirring occasionally to prevent sticking.
