Cheesy Baked Ground Turkey and Black Bean Skillet

Ingredients
Step 1 — For the Skillet
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1.5 cups shredded cheddar or Monterey Jack cheese (or a blend)
Step 2 — For Serving (Optional)
- Sour cream or Greek yogurt
- Chopped cilantro
- Avocado slices

Brown Turkey
Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground turkey and cook, breaking it up, until browned. Drain off excess grease.

Sauté Vegetables
Add chopped onion and bell pepper to the skillet. Cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

Add Beans and Tomatoes
Stir in the rinsed black beans, drained corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.

Melt Cheese
Preheat broiler. Sprinkle the shredded cheese evenly over the top of the skillet mixture. Place the skillet under the broiler for 2-4 minutes, or until the cheese is melted and bubbly. Watch closely to prevent burning.

Remove skillet from the oven. Let stand for a minute. Serve hot, topped with optional sour cream, cilantro, or avocado slices.
