Step 1 — For the Skillet
- 1 tbsp olive oil
- 1.5 lbs lean ground turkey
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 cup frozen corn
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (8 oz) can tomato sauce
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
Step 2 — Optional Toppings
- Sour cream or Greek yogurt
- Chopped cilantro
- Avocado slices

Brown Turkey and Aromatics
Heat olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat. Add the chopped onion and red bell pepper, and cook until softened, about 5-7 minutes.

Add Remaining Ingredients
Stir in the minced garlic, frozen corn, frozen peas, rinsed black beans, tomato sauce, chili powder, cumin, salt, and pepper. Cook for 5 minutes, stirring occasionally, until the vegetables are heated through.

Melt Cheese
Sprinkle the shredded cheddar cheese evenly over the top of the skillet mixture. Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.

Serve the cheesy ground turkey and veggie skillet hot, directly from the pan. Offer optional toppings like sour cream, cilantro, or avocado slices.
