Ingredients
Step 1 — For the Skillet
- 1 tbsp olive oil
- 1 lb lean ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1/2 cup milk
- 1 cup shredded cheddar cheese (or a blend)
- 1/2 cup frozen peas (optional)
- Salt and black pepper to taste
Instructions
- 1
Brown Turkey and Sauté Aromatics
Heat olive oil in a large, oven-safe skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off excess fat. Add the chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- 2
Add Rice and Broth
Stir in the uncooked rice and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
- 3
Simmer and Cook Rice
Reduce heat to medium-low, cover the skillet tightly, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
- 4
Add Milk, Cheese, and Peas
Stir in the milk, shredded cheese, and frozen peas (if using). Cook, stirring, until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
