Ingredients
Step 1 — For the Skillet
- 1 tbsp olive oil
- 1 lb lean ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cinnamon
- 1.5 cups diced sweet potato (about 1 medium)
- 1 cup chicken or vegetable broth
- 2 cups fresh spinach
- Salt and freshly ground black pepper to taste
- Optional garnish: fresh cilantro, a dollop of plain Greek yogurt

Brown Turkey
Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Sauté Aromatics and Spices
Add onion to the skillet and cook until softened, about 5 minutes. Stir in garlic, cumin, smoked paprika, and cinnamon, and cook for 1 minute until fragrant.

Add Sweet Potato and Broth
Add the diced sweet potato and chicken broth to the skillet. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until sweet potatoes are tender. Stir occasionally.

Stir in the fresh spinach and cook until wilted, about 1-2 minutes. Season with salt and pepper to taste.
