Ingredients
Step 1 — For the Chicken and Veggies
- 1.5 lbs boneless, skinless chicken breasts, thinly sliced
- 1 tbsp olive oil
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 1 packet fajita seasoning
- 1/4 cup water
Step 2 — For Serving
- 8 small flour tortillas
- Optional toppings: shredded cheese, sour cream, salsa, avocado, lime wedges

Sauté Aromatics
Heat olive oil in a large skillet over medium-high heat. Add sliced onion and bell peppers and cook until softened, about 5-7 minutes.

Cook Chicken
Add sliced chicken to the skillet. Sprinkle with fajita seasoning and stir to coat. Cook until chicken is cooked through, about 5-7 minutes.

Add Liquid and Combine
Pour in water and stir to combine. Bring to a simmer and cook for 1-2 minutes, scraping up any browned bits from the bottom of the pan.

Warm Tortillas and Serve
While the chicken cooks, warm tortillas according to package directions. Serve the chicken and veggie mixture in warm tortillas with your favorite toppings.
