Step 1 — For the Skillet
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or hot), casings removed
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can cannellini beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup low-sodium chicken broth
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 5 oz fresh spinach
- Salt and black pepper to taste

Brown Sausage
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside, leaving drippings in the skillet.

Sauté Aromatics
Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Simmer Beans and Tomatoes
Stir in the rinsed cannellini beans, diced tomatoes (with their juice), chicken broth, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer.

Combine and Cook
Return the browned sausage to the skillet. Cover and simmer for 15-20 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Serve hot, topped with grated Parmesan cheese if desired, and with crusty bread for dipping.
