Step 1 — For the Skillet
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup chopped bell pepper (any color)
- 1 cup sliced carrots
- 1/2 cup frozen peas or corn
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried Italian seasoning
- Salt and freshly ground black pepper to taste

Brown Turkey
Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off excess grease.

Sauté Aromatics and Harder Vegetables
Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic, broccoli florets, chopped bell pepper, and sliced carrots. Cook for another 5-7 minutes, stirring occasionally, until vegetables begin to soften.

Add Tomatoes and Seasonings
Pour in the diced tomatoes (with their juice), Italian seasoning, salt, and pepper. Stir everything together. Bring to a simmer.

Add Peas/Corn and Finish
Stir in the frozen peas or corn. Reduce heat to low, cover, and simmer for 5-10 minutes, or until vegetables are tender and flavors have melded. Adjust seasoning as needed.

Serve hot, either on its own or over your choice of cooked rice, quinoa, or mashed potatoes.
