Ingredients
Step 1 — Roast the beef
- 4 lb beef rib roast (bone-in)
- 4 tbsp olive oil
- 4 garlic cloves (minced)
- 2 tbsp fresh rosemary (chopped)
- 2 tbsp fresh thyme
- Salt and pepper
Step 2 — Yorkshire puddings and sides

- Beef drippings
- 2 lbs potatoes (for roasting)
- Horseradish sauce
- Gravy (from pan drippings)

Roast the beef
Rub beef with oil, garlic, herbs, salt, and pepper. Roast at 450°F 20 minutes, then reduce to 325°F. Cook to desired doneness (130°F for medium-rare), about 15 minutes per pound. Rest 20 minutes.

Roast potatoes and Yorkshire puddings
Roast potatoes in beef drippings until crisp. Make Yorkshire puddings in hot drippings while beef rests.

Carve and serve
Carve beef against the grain. Serve with Yorkshire puddings, roast potatoes, gravy, and horseradish.
