Sheet Pan Salmon with Roasted Broccoli and Sweet Potatoes

Ingredients
Step 1 — For the Sheet Pan
- 4 (6 oz) salmon fillets
- 1 lb broccoli florets
- 2 medium sweet potatoes, peeled and cubed
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 lemon, cut into wedges

Preheat Oven and Prep Veggies
Preheat oven to 400°F (200°C). Toss broccoli florets and cubed sweet potatoes with 2 tablespoons of olive oil, smoked paprika, garlic powder, salt, and pepper on a large baking sheet.

Roast Vegetables
Spread the vegetables in a single layer on the baking sheet. Roast for 15 minutes.

Prepare Salmon
While vegetables roast, pat salmon fillets dry and season with salt and pepper. Drizzle the remaining 1 tablespoon of olive oil over the salmon.

Add Salmon and Finish Roasting
Remove the baking sheet from the oven. Push the vegetables to one side and place the salmon fillets on the empty side of the sheet. Return to the oven and bake for another 10-15 minutes, or until salmon is cooked through and flakes easily, and vegetables are tender.

Serve immediately with lemon wedges for squeezing over the salmon and vegetables.
