Step 1 — For the Fajitas
- 1.5 lbs skirt steak or flank steak, thinly sliced against the grain
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
- 2 tbsp olive oil, divided
- 1 large red onion, thinly sliced
- 2 bell peppers (any color), thinly sliced
- Salt and freshly ground black pepper to taste

- Warm flour or corn tortillas
- Salsa
- Sour cream or Greek yogurt
- Guacamole or avocado slices
- Shredded cheese
- Lime wedges

Preheat and Season
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper. In a bowl, toss the sliced steak with chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), 1 tbsp olive oil, salt, and pepper. Ensure steak is evenly coated.

Prepare Vegetables
In a separate bowl, toss the sliced red onion and bell peppers with the remaining 1 tbsp olive oil, salt, and pepper.

Roast Steak and Vegetables
Spread the seasoned steak in a single layer on one half of the prepared baking sheet. Spread the seasoned vegetables on the other half. Place the baking sheet in the preheated oven and roast for 12-18 minutes, or until steak is cooked to your desired doneness and vegetables are tender-crisp. Stir halfway through for even cooking.

Warm Tortillas
While the fajitas roast, warm the tortillas according to package directions (in the oven, microwave, or on a skillet).

Remove the baking sheet from the oven. Serve the steak and vegetable mixture immediately with warm tortillas and your favorite toppings like salsa, sour cream, guacamole, and lime wedges.
