Beef and Broccoli Stir-Fry with Brown Rice

Ingredients
Step 1 — For the Stir-Fry
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 1 tbsp soy sauce (for marinade)
- 1 tsp cornstarch (for marinade)
- 2 tbsp vegetable oil, divided
- 1 lb broccoli florets
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
Step 2 — For the Sauce
- 1/4 cup low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey or brown sugar
- 1/4 cup water or beef broth
- 1 tsp cornstarch

Marinate Beef
In a medium bowl, combine the thinly sliced beef with 1 tbsp soy sauce and 1 tsp cornstarch. Toss to coat and let marinate for at least 10 minutes while you prepare other ingredients.

Prepare Sauce
In a small bowl, whisk together all sauce ingredients: 1/4 cup soy sauce, oyster sauce, rice vinegar, sesame oil, honey, water (or broth), and 1 tsp cornstarch. Set aside.

Stir-Fry Beef
Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer (cook in batches if necessary to avoid crowding) and stir-fry until browned and just cooked through, about 2-3 minutes. Remove beef from skillet and set aside.

Stir-Fry Vegetables
Add the remaining 1 tbsp vegetable oil to the skillet. Add broccoli florets and red bell pepper slices. Stir-fry for 3-5 minutes until vegetables are tender-crisp. Add minced garlic and grated ginger and stir-fry for 1 minute more until fragrant.

Combine and Serve
Return the cooked beef to the skillet. Give the sauce a quick whisk and pour it over the beef and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes. Serve immediately over cooked brown rice.
