Spicy Miso Tantanmen
Fiery sesame-miso broth with ground pork, bok choy, and noodles. Japanese-Sichuan fusion that's spicy, nutty, and utterly addictive.

Ingredients
Step 1 — Tare and broth
- 3 tbsp white miso
- 2 tbsp doubanjiang (chili bean paste)
- 2 tbsp tahini or sesame paste
- 2 tbsp soy sauce
- 1 tbsp chili oil
- 4 cups chicken broth
- 4 servings ramen noodles
Step 2 — Toppings
- ½ lb ground pork
- 2 cups bok choy
- 4 soft-boiled eggs
- Green onions
- Sesame seeds
- Nori

Cook pork and broth
Brown ground pork in a pot, set aside. Whisk miso, doubanjiang, tahini, soy sauce, and chili oil with broth. Simmer 10 minutes.

Assemble
Cook noodles and blanch bok choy. Divide noodles among bowls, add bok choy and pork. Ladle spicy broth over. Top with egg, green onions, and sesame seeds.
