Step 1 — Concentrated broth
- 6 cups chicken and pork broth (combined)
- 4 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp miso paste
- 1 tbsp doubanjiang
- 2 garlic cloves
- Ginger
Step 2 — Noodles and toppings
- 4 servings thick ramen noodles
- 4 slices chashu pork
- 4 soft-boiled eggs
- Menma
- Green onions
- Nori
- Lime wedges

Make dipping broth
Simmer broth with garlic and ginger 30 minutes. Strain and reduce slightly. Season with soy sauce, mirin, miso, and doubanjiang until intensely savory.

Serve tsukemen style
Cook thick noodles, rinse briefly under cold water, and drain well. Divide noodles into bowls. Serve concentrated hot broth in separate bowls for dipping. Arrange toppings alongside.
