Baked Feta Pasta

Ingredients
Step 1 — Roast
- 2 pints cherry tomatoes
- 8 oz block feta cheese
- 4 garlic cloves
- ⅓ cup olive oil
- 1 tsp dried oregano
- ½ tsp red pepper flakes
- ½ tsp kosher salt
- ¼ tsp black pepper
Step 2 — Finish
- 12 oz pasta (penne or rigatoni)
- ¼ cup fresh basil (chopped)
- Lemon zest (optional)

Roast tomatoes and feta
Preheat oven to 400°F. Place tomatoes and garlic in a baking dish. Nestle feta in the center. Drizzle with olive oil and sprinkle with oregano, red pepper flakes, salt, and pepper. Bake 30–35 minutes until tomatoes burst and feta is golden.

Cook pasta and combine
Cook pasta in salted water until al dente. Reserve 1 cup pasta water. Mash tomatoes and feta into a sauce, stir in pasta and splashes of pasta water until creamy. Finish with basil and lemon zest.
