Step 1 — Onions and chicken
- 2 large yellow onions (thinly sliced)
- 2 tbsp butter
- 1 tbsp olive oil
- 1½ lbs boneless chicken thighs
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp dried thyme
Step 2 — Bake
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1½ cups shredded Gruyère cheese
- ½ cup French fried onions
- Fresh thyme (for garnish)

Caramelize onions
Cook onions in butter and oil over medium-low heat 15–20 minutes until golden and jammy. Season chicken with salt, pepper, and thyme.

Assemble and bake
Preheat oven to 375°F. Place chicken in a baking dish. Top with onions, broth, and Worcestershire. Bake 20 minutes. Add Gruyère and fried onions; bake 10 more minutes until bubbly and golden.

Rest 5 minutes, garnish with fresh thyme, and serve with crusty bread or mashed potatoes.
