Ingredients
Step 1 — Make the tomato topping
- 4 ripe Roma tomatoes (diced)
- 2 tbsp fresh basil (chopped)
- 2 garlic cloves (minced)
- 3 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar
- ½ tsp salt
- ¼ tsp black pepper
Step 2 — Toast the bread
- 1 loaf rustic Italian bread (sliced ½ inch thick)
- 2 garlic cloves (halved, for rubbing)
- Extra-virgin olive oil (for brushing)

Marinate the tomatoes
Combine tomatoes, basil, garlic, olive oil, balsamic, salt, and pepper. Let sit at room temperature 15–30 minutes for flavors to meld.

Toast the bread
Brush bread slices with olive oil. Grill or broil until golden and crisp on both sides. Rub warm bread with halved garlic cloves.

Spoon tomato mixture generously over each slice. Serve immediately while bread is still warm and crisp.
