Paneer Tikka
Charred cubes of paneer and bell peppers marinated in spiced yogurt and grilled until smoky. A vegetarian showstopper for parties or as a starter before a curry feast.

Ingredients
Step 1 — Marinate
- 14 oz paneer (cubed)
- 1 red bell pepper (cubed)
- 1 green bell pepper (cubed)
- 1 medium onion (cubed)
- ¾ cup plain yogurt
- 2 tbsp besan (gram flour)
- 1 tbsp ginger-garlic paste
- 1 tsp Kashmiri chili powder
- 1 tsp garam masala
- 1 tsp chaat masala
- 1 tsp salt
- 2 tbsp oil
- Lemon juice
Step 2 — Grill or bake
- Metal skewers (soaked if wooden)
- Oil for brushing
Step 3 — Serve
- Mint chutney
- Lemon wedges
- Sliced onions

Marinate
Whisk yogurt with besan, ginger-garlic paste, spices, salt, oil, and lemon juice. Toss paneer and vegetables in marinade. Rest 30 minutes.

Grill
Thread paneer and vegetables onto skewers. Grill or broil at high heat 3–4 minutes per side until charred at edges. Brush with oil as needed.

Sprinkle with chaat masala and serve immediately with mint chutney, lemon wedges, and raw onion rings.
