Chicken and White Bean Skillet with Spinach

Ingredients
Step 1 — For the Skillet
- 1 tbsp olive oil
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 1 (15 oz) can cannellini beans (or other white beans), rinsed and drained
- 1 cup chicken broth
- 5 oz fresh spinach
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Lemon wedges for serving

Sear Chicken
Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the skillet and cook until lightly browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

Sauté Aromatics
Add chopped onion to the same skillet and cook until softened, about 5 minutes. Stir in minced garlic, Italian seasoning, and red pepper flakes (if using); cook for 1 minute until fragrant.

Add Beans and Broth
Add the rinsed and drained cannellini beans and chicken broth to the skillet. Bring to a simmer and scrape up any browned bits from the bottom of the pan. Let simmer for 5 minutes to allow flavors to meld.

Wilt Spinach and Combine
Add the fresh spinach to the skillet, a handful at a time, stirring until it wilts down. Return the cooked chicken to the skillet. Stir in the grated Parmesan cheese.

Season with additional salt and pepper if needed. Serve hot, with lemon wedges for squeezing over the top.
