Ingredients
Step 1 — For the Pork and Vegetables
- 1 lb pork tenderloin, thinly sliced
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 tbsp vegetable oil
- 1 cup broccoli florets
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 inch ginger, grated
Step 2 — For the Peanut Sauce
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp sriracha (optional)
- 2-3 tbsp warm water, to thin
Step 3 — For Serving
- 8 oz cooked noodles (e.g., whole wheat spaghetti, udon, or soba)
- Chopped peanuts and cilantro, for garnish

Marinate Pork
In a medium bowl, toss the thinly sliced pork tenderloin with 1 tbsp soy sauce and 1 tsp cornstarch. Set aside for at least 10 minutes.

Prepare Peanut Sauce
In a small bowl, whisk together peanut butter, 2 tbsp soy sauce, rice vinegar, honey (or maple syrup), and sriracha (if using). Gradually whisk in warm water until the sauce reaches your desired consistency. Set aside.

Stir-Fry
Heat vegetable oil in a large skillet or wok over high heat. Add the marinated pork and stir-fry until browned and cooked through, about 3-4 minutes. Remove pork from skillet and set aside.

Cook Vegetables
Add broccoli florets, sliced red bell pepper, and julienned carrot to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp. Add minced garlic and grated ginger and cook for 1 minute more until fragrant.

Return the cooked pork to the skillet with the vegetables. Pour in the prepared peanut sauce and stir to coat everything evenly. Add the cooked noodles and toss to combine. Cook for 1-2 minutes until heated through. Serve immediately, garnished with chopped peanuts and cilantro.
