Ingredients
Step 1 — For the Stir-Fry
- 1 lb pork tenderloin, thinly sliced
- 1 tbsp cornstarch
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 (15 ounce) can black beans, rinsed and drained
- 1/4 tsp red pepper flakes (or more, to taste)

Marinate Pork
In a medium bowl, toss the sliced pork with cornstarch, soy sauce, and sesame oil. Let it sit for at least 5 minutes while you prepare the vegetables.

Stir-Fry Vegetables
Heat vegetable oil in a large skillet or wok over medium-high heat. Add bell peppers and broccoli florets and stir-fry for 3-4 minutes until crisp-tender.

Cook Pork
Push the vegetables to the side of the skillet or remove them temporarily. Add the marinated pork to the hot skillet and stir-fry until browned and cooked through, about 3-5 minutes. Add garlic and ginger and stir-fry for 1 minute until fragrant.

Combine and Finish
Return the vegetables to the skillet if removed. Stir in the rinsed black beans and red pepper flakes. Toss everything together for 1-2 minutes until heated through. Serve immediately over cooked brown rice, sprinkled with sesame seeds if desired.
