Ingredients
Step 1 — For the Stew
- 1 tbsp olive oil
- 1 lb Italian sausage, casings removed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1 (28 ounce) can diced tomatoes, undrained
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 2 cups chicken broth
- 1/2 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste

Brown Sausage
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.

Add onion to the pot and cook until softened, about 5 minutes. Stir in garlic, oregano, and thyme and cook for 1 minute more until fragrant.

Stir in diced tomatoes (with their juice), cannellini beans, and chicken broth. Bring to a boil, then reduce heat and simmer, uncovered, for 20 minutes, stirring occasionally, until slightly thickened.
