Korean Gochujang Pork Stir-Fry with Brown Rice

Ingredients
Step 1 — For the Stir-Fry
- 1 lb boneless pork loin, thinly sliced
- 1 tbsp sesame oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups broccoli florets
Step 2 — For the Gochujang Sauce
- 1/4 cup gochujang
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/4 cup water
Step 3 — For Serving
- 2 cups cooked brown rice
- Toasted sesame seeds for garnish

Prepare Sauce
In a small bowl, whisk together gochujang, soy sauce, honey, rice vinegar, sesame oil, and water. Set aside.

Sauté Aromatics and Pork
Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat. Add garlic and ginger and sauté for 30 seconds until fragrant. Add pork and cook until browned, about 3-4 minutes.

Stir-Fry Vegetables
Add bell peppers and onion to the skillet. Stir-fry for 3-4 minutes until slightly softened. Add broccoli florets and cook for another 3-4 minutes until tender-crisp.

Combine and Serve
Pour the gochujang sauce over the pork and vegetables. Stir to coat and cook for 1-2 minutes until the sauce thickens. Serve immediately over cooked brown rice, garnished with sesame seeds.
