- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 oz cremini mushrooms, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp dried thyme
- 2 cups beef broth
- 1/2 cup sour cream
- 2 tbsp all-purpose flour (optional, for thickening)
- Salt and black pepper to taste

Cook Chicken and Sauté Vegetables
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from the skillet and set aside. Add sliced mushrooms and chopped onion to the skillet, cooking until softened and lightly browned, about 5-7 minutes. Stir in minced garlic, paprika, and thyme, cooking for 1 minute until fragrant.

Build the Sauce
If using, sprinkle flour over the vegetables and stir for 1 minute. Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer, then return the cooked chicken to the skillet. Reduce heat to medium-low, cover, and let simmer for 10-15 minutes, or until chicken is cooked through and tender.

While the stroganoff simmers, cook egg noodles according to package directions. Once the chicken is cooked, remove the skillet from heat and stir in the sour cream until well combined and creamy. Do not boil after adding sour cream to prevent curdling. Season with salt and black pepper to taste. Serve hot over cooked egg noodles, garnished with fresh parsley.
