Chicken Satay with Peanut Sauce
Grilled marinated chicken skewers with rich peanut dipping sauce. A Thai party favorite — smoky, sweet, and utterly crowd-pleasing.

Ingredients
Step 1 — Marinade
- 2 lbs chicken thighs (cut into strips)
- ¼ cup coconut milk
- 2 tbsp curry powder
- 1 tbsp turmeric
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 2 garlic cloves (minced)
Step 2 — Peanut sauce
- ½ cup smooth peanut butter
- ¼ cup coconut milk
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tsp sriracha
- Water to thin
Step 3 — Skewer and grill
- Wooden skewers (soaked)
- Vegetable oil
- Cucumber relish (ajad, optional)
- Fresh cilantro

Marinate
Combine chicken with coconut milk, curry powder, turmeric, fish sauce, sugar, and garlic. Marinate at least 1 hour.

Make peanut sauce
Whisk peanut butter, coconut milk, lime juice, fish sauce, sugar, and sriracha. Thin with water to drizzling consistency.

Grill
Thread chicken onto skewers. Grill over medium-high heat 3–4 minutes per side until charred and cooked through. Serve with peanut sauce and cucumber relish.
