Ingredients
Step 1 — For the Skillet
- 1 lb pre-cooked chicken sausage (e.g., Italian or Andouille), sliced
- 1 tbsp olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can cannellini beans (or Great Northern beans), rinsed and drained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1 tsp dried Italian seasoning
- 5 oz fresh spinach
- Salt and black pepper to taste
- Optional: grated Parmesan cheese for serving

Brown Sausage
Heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausage and cook until browned on both sides, about 4-5 minutes. Remove sausage from skillet and set aside.

Add chopped onion to the same skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Add Beans and Tomatoes
Stir in the rinsed and drained cannellini beans, diced tomatoes (with their juice), chicken broth, and Italian seasoning. Bring to a simmer.

Simmer and Wilt Spinach
Return the browned sausage to the skillet. Reduce heat to medium-low, cover, and simmer for 10 minutes, allowing flavors to meld. Stir in the fresh spinach and cook, stirring, until it wilts, about 2-3 minutes.
