Creamy Garlic Parmesan Chicken Pasta

Ingredients
Step 1 — For the Pasta
- 12 oz fettuccine or penne pasta
- 1 tablespoon olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 2 cups fresh spinach
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)

Cook Pasta
Cook pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Drain pasta and set aside.

Cook Chicken
While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Make Sauce
Add minced garlic to the same skillet and cook for about 30 seconds until fragrant. Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat to low. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper.

Combine Ingredients
Add the cooked chicken back to the skillet. Stir in the fresh spinach and cook until wilted, about 1-2 minutes. Add the drained pasta to the skillet and toss everything together to coat in the creamy sauce. If the sauce is too thick, add a little reserved pasta water until it reaches desired consistency.

Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
