Creamy Chicken & Mushroom Pasta

Ingredients
Step 1 — For the Pasta
- 8 oz fettuccine or penne pasta
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 8 oz mushrooms (cremini or white), sliced
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste

Cook Pasta
Cook pasta according to package directions until al dente. Drain, reserving about 1/2 cup of the pasta water. Set aside.

Cook Chicken
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

Sauté Mushrooms & Garlic
Add sliced mushrooms to the same skillet (add a little more oil if needed). Cook until softened and browned, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Make Cream Sauce
Reduce heat to medium. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.

Combine
Return the cooked chicken to the skillet. Add the cooked pasta to the sauce. Toss gently to combine. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.

Stir in fresh parsley and serve immediately. Garnish with extra Parmesan if desired.
